Wassail is a drink usually made around Christmas time. It is a sweet and tarty drink that is best served warm. It can also be made all season long with a minor substitution: Apple Juice instead of Apple Cider. It is a great substitute for a warm drink on a cold day if you can not have coffee or hot cocoa. This drink can also be made alcoholic by adding Mead or Spiced Rum to taste.


3/4 Gal. Apple Cider

3 Cups Sugar

1 1/2 Quart Cranberry Juice

2 Cups Lemon Juice

1 1/2 Pints Orange Juice

2 teaspoons whole Cloves

2 teaspoons Cinnamon sticks

2 teaspoons whole Nutmeg (or Allspice)


Step 1: In a large pan combine, cider, sugar, cranberry juice, lemon juice, and orange juice.

Step 2: In a coffee filter or cheesecloth place the spices and tie shut. Place bag into juice mixture

Step 3: Heat and simmer for 10-20 minutes

Yields: 1 1/2 gallons
