This salsa is good for taco night or a great all natural tomatillo salsa for Tomatillo Shrimp Enchiladas.


8 oz. tomatillos, husked, rinsed, and coarsely chopped

1 small red or white onion, coarsely chopped

3-5 fresh green chili peppers (serrano or jalapeño) seeded and coarsely chopped

1 clove garlic, peeled (optional)

3-4 tablespoons fresh cilantro sprigs

1 teaspoon of salt, or to taste

3/4 cup sugar (optional)


Step 1: Combine in a food processor or blender and coarsely puree leaving mixture a little chunky.

Step 2: Remove to a medium bowl and stir in enough cold water to loosen the mixture to a sauce like consistency. Stir in salt and sugar.

Serve immediately.

Yields ≈ 2 cups
