This is a very dry bread that tastes good smothered in Buttery Spread. It also tastes amazing if served warm. You can also stir in nuts or dried fruit (other than raisins) for different flavors. Traditionally though, this bread is made without the dried fruit or nuts.
1 2/3 cups all purpose flour
5 Tablespoons Sugar
1 Teaspoon baking powder
1/2 Teaspoon baking soda
1/2 Teaspoon salt
1 large egg
1 cup plain soymilk
4 Tablespoons warm melted Smart Balance® Buttery Spread
1 Cup raisins (optional)
2 Teaspoon caraway seeds (optional)
Step 1: Preheat ovn to 350°. Grease an 8 1/2in x 4 1/2 in (6 cup) loaf pan.
Step 2: Whisk together thoroughly in a large bowl the flour, sugar, baking powder, baking soda and salt. Stir in the raisins and caraway seeds if you want to use them.
Step 3: In a different bowl whisk together the egg, soymilk, and butter.
Step 4: Add the liquid mix to the flour mix and stir just until the dry ingredients are moistened. The batter will be stiff and sticky. Scrape the batter into the loaf pan and spread evenly. Use a sharp knife to slash a large X about 1/2 in deep on top of the batter. Bake until golden brown and a toothpick inserted in the ceter comes out clean, about 45-50 minutes. Let cool in pan on bread rack 5-10 minutes before unmolding to cool completely on the rack.
