With the turning of the seasons from winter to spring, I start thinking about the warmer summer days ahead. This soup is a delicious way to try to cool off on a hot summer day.
2 medium very ripe and sweet cantaloupes, peeled, seeded and cut into chunks
1 cup fresh orange juice
1/4 cup fresh lime juice
2 tablespoons fresh lemon juice
1/4 cup freshly grated peeled ginger
Thinly sliced kiwi fruit or strawberries and fresh mint springs for garnish
Step 1: Puree the melons in a food processor until smooth
Step 2: Pour the pureed melons into a large bowl and stir in the orange, lime and lemon juice. Refrigerate until cold (≈ 2 hours)
Step 3: Prior to serving, use a cheese cloth or your hands to squeeze the juice out of the ginger into a small bowl. Stir 4 teaspoons of the juice into the soup. Add garnish if desired.
