Preheat oven 350°. Grease an 81/2 x 4 1/2in loaf pan. Prepare ingredients at room temperature.


1 1/2 cup all purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup soymilk

1/4 cup orange juice

grated zest of 1 small lemon

grated zest of 1 orange

6 tablespoon Smart Balance® Buttery Spread

2 large eggs, lightly beaten

1/3 cup finally chopped dried cranberries or apricots


Step 1: Whisk together flour, baking powder, and salt thoroughly in a bowl.

Step 2: In a separate bowl, combine the soymilk, orange juice, and lemon and orange zest.

Step 3: In a large bowl beat  buttery spread on high speed until lightened in color and texture ≈2-3 minutes

Step 4: Add the flour mixture in 3 parts alternating with the milk mixture in 2 parts, beating on low speed or stirring with a rubber spatula just until incorporated, scraping the sides of the bowl as necessary.

Step 5: Stir in the dried fruit and scrape the batter into the greased pan and spread evenly. Bake until golden brown and a toothpick inserted in the center comes out clean, ≈45-50 minutes. Let cool in the pan on a rack for 5-10 minutes before unmolding to cool completely on the rack.
