Summer is coming and the grills will be coming out soon. Thought I’d share a lovely grill recipe that tastes delicious on a summer’s day.
4 skinned and boned chicken breasts
2 tablespoons olive oil
1 teaspoon of salt
1 teaspoon of pepper
4 sprigs of fresh basil
Step 1: Preheat grill to 350° – 400°
Step 2: Rub chicken breasts with olive oil and sprinkle with salt and pepper
Step 3: Cut a small slit at the end of each chicken breast and tuck end of 1 sprig of herb per piece of chicken, laying the sprig over top of the chicken.
Step 4: Grill chicken, covered with lid of grill, 6 or 7 minutes on each side or until done. Remove and discard herb sprigs if desired. Serve over fresh spinach.
