This little number is from my search for pudding. It is gluten, egg, dairy, and nut free. It as fantastic with fresh fruit on top.  Rice for breakfast is a great start to anyone’s day, so make a big batch. You can always freeze left over portions to use at another time by thawing them in the microwave or a steamer! Brown rice is more nutritious and flavorful than ordinary white rice so this is a good way to get moving in the morning if you’re not a big oatmeal fan.


2 cups Vanilla Soymilk, divided

3/4 cups uncooked whole grain brown rice*

1/3 cup packed light brown sugar

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 cup golden raisins or dried cranberries

1/2 teaspoon vanilla

mixed berries (optional)


Step 1: Bring 1 1/2 cups soymilk to a boil in medium saucepan. Stir in rice, brown sugar, salt and cinnamon. Return to a boil. Reduce heat; cover and simmer 15 minutes.

Step 2: Stir in remaining 1/2 cup soymilk and raisins. Cover; simmer 10-15 minutes or until rice is tender. Remove from heat; stir in vanilla. Serve with berries, if desired.

Yields 4 servings


*notes* Rice thickens as it cools. for a thinner consistency, stir in additional soymilk just before serving. Check cooking time on packages for rice. Some brown rice may require a slightly longer cooking time.
