This sweet syrup is not only dairy free, but gluten-free, egg free and nut free as well. Its good on dairy free plain or fruit filled pancakes or waffles. It’s easy to make as well which is always a plus!
1/2 cup blueberries, divided
1/2 cup maple syrup, divided
1/2 teaspoon grated lemon peel
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
Step 1: Bring 1/4 cup blueberries and 1/4 cup syrup to a boil in a small saucepan over medium heat. Mash hot berries with fork.
Step 2: Add remaining 1/4 cup blueberries and 1/4 cup syrup, lemon peel, cinnamon and nutmeg
Step 3: Cook and stir over medium heat about 2 minutes or until heated through
Yields 1 cup
