Whenever I think of summer I think of sitting outside, drinking lemonade and eating fresh fruit. This cake brings the freshness of fruit into a cake that can be enjoyed on the patio. It is refreshing and creamy and tastes delicious. Not only is it dairy free but it is also gluten-free and nut-free. This cake goes good with a cold glass of lemonade or tea, and a great conversation with friends!


3/4 cup gluten-free all-purpose flour blend

1/2 cup cornmeal

1 teaspoon xanthan gum

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 cup dairy free buttery spread, softened

2/3 cup granulated sugar

2 eggs

1/ cup vanilla soy yogurt

1 cup fresh peach slices

Sliced strawberries

Additional vanilla soy yogurt


Step 1: Preheat over to 325°. Spray 9-inch pie plate with nonstick cooking spray. Combine flour, cornmeal, xanthan gum, baking powder and baking soda in medium bowl.

Step 2: Beat buttery spread and sugar in large bowl with electric mixer at medium speed until fluffy. Add eggs and 1/2 cup yogurt; beat until well combined. Beat in flour mixture until combined. Stir in peaches.

Step 3: Pour batter into prepared pie plate. Bake 35 minutes or until toothpick inserted into center comes out clean. Top with strawberries and drizzle with yogurt.

Yields 6 servings.
