Summer is coming so I am always keeping my eyes open for sweet cool treats. There are plenty of brands of soy and rice ice creams around, but the rice ice creams either taste like cardboard or are too powerful in flavor and a lot of the soy ice creams have chocolate in them in some way or another. Not being able to have caffeine really sucks sometimes. This recipe is a fun, stylish way to make snow cones! So, make a few dozen for your next party!

6 small Valencia or blood oranges

1/4 cup sugar

1/4 cup water

1/8 teaspoon ground cinnamon

Step 1: Cut oranges in half; squeeze juice into medium bowl and reserve empty shells. Discard Seeds.

Step 2: Combine sugar and water in small microwavable bowl; microwave on HIGH 30 seconds to 1 minute until sugar is dissolved. Stir sugar mixture and cinnamon into juice.

Step 3: Pour juice mixture into shallow 9-inch pan. Cover and place on flat surface in freezer. After 1 to 2 hours when ice crystals form at edges, stir with fork. Stir 2 or 3 more times at 20 to 30 minute intervals until texture of granita is like icy snow.

Step 4: Scoop granita into orange shells to serve. Garnish with orange peel.

Yields 6 servings

Variation: add a small amount of orange liqueur to the orange juice mixture before freezing. Top with candied orange slice or mint sprig.
