Breakfast burritos. They’re delicious, convenient and can be taken on the go if you’re running late. Granted, if you’re running late, you probably don’t have the time to cook up the eggs in a skillet, but scrambled eggs can be fixed in a microwave in about a minute. Yeah, McDonald’s has breakfast burritos for 1$, but they aren’t dairy free, nor can you order them without cheese. If you knew in advance that you’re going to be running late, or you have an early start, to save time you can fry up the eggs the night before then pop them in the microwave in the morning for 30 seconds for a quick re-heat and start your day off with a delicious warm breakfast. The following recipe takes maybe 15 minutes max to make and it is gluten, nut and dairy free.


6 small corn tortilla shells

2 eggs

Non-stick cooking spray

1/2 teaspoon gluten-free taco or fajita seasoning mix*

2 tablespoons Veganrella mozzarella flavored dairy free cheese, shredded

2 tablespoons mild salsa

2 tablespoons chopped fresh parsley

Shredded lettuce

Green onions


Step 1: Heat tortilla shells according to package directions; cool slightly. Meanwhile, beat eggs in small bowl until well blended. Spray small skillet with cooking spray; heat over medium-low heat.

Step 2: Pour eggs into skillet; cook and stir until desired doneness. Sprinkle eggs with taco seasoning mix.

Step 3: Spoon egg mixture into tortillas add 1 teaspoon cheese, salsa and parsley. Add green onions and lettuce if desired.

Yields 2 servings

*Alternatively, you can create your own seasoning by mixing cummin, coriander, paprika and a little garlic and onion powder to taste.
