So, I had this craving for meatloaf and with the no beef diet going on, it seemed impossible. But then I remembered they’ve started doing ground turkey now-a-days, so I bought some turkey and turkey polska keilbasa sausage and decided to see if I could pull off a turkey meatloaf. It turned out surprisingly good.
1lb ground turkey breast
1/2 lb Turkey polska keilbasa sausage
1 Tablespoon ketchup
1- 1.5 onions, finely chopped
1 pack lightly salted saltine crackers, crunched
1 teaspoon garlic, minced
1 teaspoon salt and pepper, mixed
Step 1: Preheat oven to 350 degrees. if you buy packaged sausage, you’ll want to pull the meat out of the casing and break it into pieces. Mix the ground turkey and sausage together. Create a bowl shape and add 2-3 crushed eggs, onions, and a tablespoon or so of ketchup. Mix well. Add half the crushed crackers and mix. The consistency of the meatloaf should be semi-dry/moist. If it’s too moist add more cracker.
Step 2: Spray bread pan with non-stick spray. Form loaf and place in bread pan. Cover with garlic, ketchup and salt and pepper. Place in cover. Bake for 1.5-2 hours.
Simple, easy and delicious.
