I love Subway’s Orchard Chicken Salad sub. It is delicious, crisp and refreshing. Unfortunately, they don’t offer it year round. Also, I don’t have the budget to go every day to Subway and buy a sub. So I’ve come up with a budget friendly way to make it at home, to my diet restrictions and enjoy it anytime I want


3 cups red apples, chopped small

1/2 cup sliced celery, diced small

4 cups cooked chicken, but into small cubes

1/4 cup raisins (to taste)

1/4 cup dried cranberries (to taste)

3/4 cup Earth Balance MindfulMayo

1/2 teaspoon celery salt

Salt and pepper to taste


Mix everything together and enjoy!

Yields 3-4  1 tablespoon servings
