Today is step 2 in the Kashi Black Bean Mango dish. These peppers can be used in just about anything, a good start to roasted red pepper relish (swap out the green and yellow bell peppers for more red peppers and leave out the onions) or as a garnish for pork, chicken or turkey.

Ingredients

Non-stick olive oil cooking spray

2 medium green bell peppers

2 medium red bell peppers

2 medium yellow bell peppers

4 small onions

1 teaspoon of dried Italian seasoning

1/2 teaspoon dried basil

1/4 teaspoon ground cumin

 

Instructions

Step 1: Preheat over to 375. Spray a 15 x 10 inch pan with the cooking spray

Step 2: Cut all the bell peppers into 1.5 inch pieces and quarter the onions.

Step 3: Place vegetables on to pan and spray vegetables with cooking spray.

Step 4: Bake for 20 minutes. Stir and then sprinkle the vegetables with Italian seasoning, basil and cumin.

Step 5: Increase oven temperature to 425 and  bake for another 20 minutes or until vegetables are crisp and edges are lightly browned.

Yields about 6 servings.
